Changing the Interior Bones

I’m getting super anxious to reduce the oak overload in our house.  The trim, kitchen, doors, built-ins, you name it, are all oak.  The somewhat hard part about this is that although we aren’t a fan of the color, the wood is in GREAT condition which only makes painting over it that much harder. I definitely want a white kitchen, but I’m now thinking we might be able to keep some of the oak in other places?
